Egg White Frittata

Ingredients:
4 egg whites and 1 whole egg
1 teaspoon crushed garlic
1 tablespoon chopped onion
1 cup chopped fresh spinach
extra virgin olive oil spray
salt and pepper
pico de gallo or hot sauce

Servings: 1 meal

Directions:
Combine 4 egg whites and 1 whole egg into a bowl and whisk, then add salt and pepper and whisk some more. Spray your non-stick fry pan with one second of Extra Virgin Olive Oil or Coconut Oil and place burner on low heat. Add one cube of frozen Dorot garlic or fresh crushed garlic, 1 Tablespoon of chopped onion and sauté until lightly browned. Add spinach, salt and pepper. Cook until spinach just begins to wilt. Remove and place to the side in a bowl. Spray your pan for one more second. Add your whisked eggs and wait about 30 seconds. Add your spinach and onion sauté mix and spread evenly in the eggs. Cook on low heat until the edges start to brown. Delicately lift an edge and get your spatula under it so you can flip it. The center of the frittata should not be soupy. It should be almost cooked through. Flip it over to cook just the top part. About 30 seconds. Then flip over onto a plate. Enjoy with pico de gallo, your favorite hot sauce, or as is.

Scrambled Eggs and Pico

Ingredients:
2 eggs
salt and pepper
extra virgin olive oil spray
1/4 cup pico de gallo

Serving: 1 meal

Directions:
Spray your non-stick fry pan with one second of Extra Virgin Olive Oil or Coconut Oil and place burner on low heat. Whisk 2 whole eggs and add salt and pepper. Add eggs to fry pan and using low heat scramble your eggs. Top with Trader Joe’s mild or medium Pico de Gallo or make your own.

Simple Grab and Go Breakfast Ideas:

~ 2 hard boiled eggs.

~ One single serve Fage Total 0% Greek yogurt topped with 1/4 cup fresh cut up strawberries or fresh blueberries.

~ One single serve Fage Total 0% Greek yogurt topped with 1/4 cup Trader Joe’s frozen wild blueberries (these are the really small blueberries and are perfect to top on your yogurt.)

~ Strawberry Chocolate or Vanilla Whey Shake (Mix Chocolate Whey with water, and frozen berries. For a more creamy shake put in 1/4 cup Greek Yogurt.)

EXTRA TIPS & TRICKS

The Perfect Hard Boiled Egg

Start with 6 cups of cold water. Place 6 eggs gently at the bottom of the pot. Add 1/4 cup of white vinegar and about 10 turns of your salt grinder. Turn your heat on high. Once water begins to boil, turn off your burner, cover the pot with a lid and place your timer for 12 minutes. After 12 minutes drain the water and add eggs to ice water. Peel eggs in the ice water. Place peeled eggs into a zip-lock back to eat over the next couple of days.

Easy Pico

Forget trying to make it and buy it at Trader Joe’s. It is delicious, either mild or medium in the cold section by the cheese (that you can’t have, sorry.)

If you do not have a Trader Joe’s look for a fresh pico de gallo that has simple ingredients of chopped Roma tomatoes, yellow onion, cilantro, jalapeno, garlic, salt, and fresh lime juice. You can try making your own too!
