Simple Guidelines

You may have any protein; as much as you want, just make it clean. Only 1 second of spray pan is allowed for cooking.

You may have any veggies from the approved list HERE. As much as you want, again, just make them clean, steamed or raw but you may use herbs, salt and pepper for taste where need.

Chicken Veggie Chop Salad

Ingredients:
grilled chicken (optional)
spinach
butter lettuce
mixed greens of any kind
cucumber
raw asparagus
peppers (red, green, and orange)
red onion
tomato
carrots
radicchio
radishes

Servings: 1-4 cups depending on what you make.

Directions:
Start with mixed blend of lettuce and include spinach. Chop up lettuce so there are no huge pieces. Chop up veggies into small pieces and slices. For this chop salad you want to gain as much color as possible. Green, purple, orange, yellow, and red.

Add grilled warm or cold chicken chopped into 1×1 inch pieces.

Drizzle or toss with your favorite dressing from below.

Salad Dressings

~ Ready Made: Walden Farms Italian Calorie Free Dressing (at Sprouts)

~ Simple Vinaigrette: Squeeze a fresh lemon and a splash of balsamic vinegar onto your salad.

~ Dijon Lemon Vinaigrette: Mix or blend to taste the following: Apple Cider Vinegar or Balsamic Vinegar with dijon mustard, and lemon, salt and pepper.

~ Strawberry Dijon Lemon Vinaigrette (Endo180 Fave): Blend in electric blender to taste the following: Apple Cider Vinegar or Balsamic Vinegar with dijon mustard, and lemon plus 4-5 fresh strawberries.

Grilled Talapia with Asparagus and Tomato Tapenade

(Chicken breast can be substituted)

Ingredients:
olive oil spray
Talapia or other white fish or chicken
Dorot garlic cubes (or fresh crushed)
Dorot basil cubes (or fresh chopped)
fresh full size lemon
fresh full size heirloom or organic tomato
salt and pepper
fresh asparagus spears or broccoli heads

Servinds: 1 meal

Directions:
Spray pan for 1 second on medium heat.
Add thawed fish. Add garlic and basil. When garlic and basic mix together well to create a paste, smear on the top of the fish. Chop a lemon in half and squeeze first half in pan (not on the fish). Place the lemon flat side down next to the fish. Cover pan quickly and let cook for about 5 minutes. Chop up a tomato and add to both sides of the fish sandwiching it in. Cover and cook for an additional 1-2 minutes. Flip fish over and mix tomato and garlic/basil mixture together a bit, but keep to the side of the fish. Add lots of pepper and salt to taste. Cook until almost brown. Add 6-10 spears of asparagus on the top of the tomatoes in the pan. (Broccoli may be substituted.) Squeeze second half of lemon over the entire dish. Cook for 2 more minutes or until asparagus is just tender (don’t overcook your asparagus.) Take your fish or chicken out and place on your plate. Place asparagus next to it. If your tomato mix is not burnt up a bit, place your heat to high and char it a bit. Mix it up. It should be red with black areas of burnt tomato. Scrape out of the pan and spread over the top of your fish/chicken.

Lemon Pepper Grilled Chicken with Steamed Veggies

Ingredients:
chicken breast
fresh lemon
salt and pepper
1 teaspoon olive oil

Directions:
Squeeze a fresh lemon into a bowl with olive oil and add lots of pepper and a pinch of salt. Pan fry, grill, or bake chicken coated in lemon pepper mix.

Steam your favorite veggies, sprinkle with herb seasoning and a splash of lemon.

Grilled Shrimp and Kale Salad

Ingredients:
6-12 fresh or frozen shrimp
fresh lemon
fresh rosemary
favorite seasoning
2 cups kale
veggies of choice such as celery, cabbage, asparagus, tomatoes, etc.

Directions:
Grill your shrimp with lemon and seasoning to taste. Add chopped rosemary during the final stages of grilling. Chop of your sale salad super fine. Add your favorite salad additions like chopped celery, cabbage, asparagus, tomatoes, onions, and bell peppers.
